Paella

  • 8 kycklingben
  • 2 chorizokorvar
  • 4 råa jätteräkor med skal
  • 200 g färska blåmusslor
  • olive oil
  • 1 yellow triple
  • 3 cloves of garlic
  • 1 röd chili
  • rökt paprikapulver
  • 1 pkt saffran
  • 2 dl white wine
  • Water
  • 2 dl rundkornigt ris t ex Carnaroli
  • 1 lemon
  • kruspersilja strimlad,
  • Grillade pepper
  • salt black pepper

Först stek kycklingben i olja i en vid pannan. Skär korven i bitar och klägg i pannan tillsammans med kycklingen. Hacka lök och vitlök och tillsätt i pannan. Hacka chilin och lägg i pannan.Häll i paprika och saffran i grytan/pannan. Häll i vinet i pannan och lite vatten. Boil 20 minutes.

Chilimarmelad

  • 10 st urkärnade chilipeppar
  • 4 cloves of garlic
  • Skalad paprika på burk, 2-3 stycken bitar
  • 500 gr syltsocker (pectin)
  • 500 ml vittvincidervinegar
  • 2 st scotch bonnet
  • A little salt

Kör chili och vitlök och paprika i matberedaren

Pulsa lite och lägg allt i en

kastrull.

Lägg i sockret på en gång.

Sött hål på scotch bonnet och lägg i kastrullen. Obs kärna inte ur dessa eller ngt annat än att sticka hål på dom med en knivsudd.

Simmer for 25 mine

Häll upp på steriliserade burkar.

Seasoned butter

200 gr room temperature butter

1 Kruka persilja

1 pot tarragon

A few sprigs of thyme

A few sprigs of rosemary

1 green jalapeno

1 clove of garlic

1 tbsp dijon mustard

1 tsk currypulver

4-5 anchovies

2 tbsp capers

A few drops of white vinegar

Do this

Put everything except butter in a food processor and mix everything

Add the butter and continue mixing until a smooth mixture

Place in the fridge for a couple of hours before serving

Keeps in the fridge 3-4 day.

Summer tomato salad

4-6 different tomatoes

1 rödlök

2 tablespoons mayonnaise

2-3 red wine owner

Oliva

Salt and black pepper

Parsley

Do this:

Mix mayo vinegar, olive oil, salt and pepper.

Cut tomatoes into different sizes, put all the tomatoes and parsley on top of the dressing.

Mix everything before serving

Pray in a different way

  • 250g melted butter approx 80 gr hot
  • salt
  • 1 eggs
  • 1 lemon wedge
  • 5-6 drops tabasco
  • 4-5 Drizzle Worcester Sauce
  • 1 tsp tarragon leaves in vinegar (just the liquid)
  • Chopped parsley
  • Chopped tarragon leaf (from the can or fresh)

Do this:

  • Melt the butter until approx 70 , 80 gr
  • Hand-mix and add eggs, salt, lemon, tabasco, worcester sauce and the tarragon mixture liquid in vinegar
  • Mix at least 25 sekunder
  • Carefully add the butter in a stream until it thickens
  • Season with tarragon, salt and parsley

Griller Julskinka

INGREDIATE

  • 1. 1-2 egg yolks (depending on the size of the eggs)
  • 2. 1 msk dijonsesnap
  • 3. 3 tablespoons coarse, sweet mustard
  • 4. 1 tablespoons brown sugar (bedding)
  • 5. 1 tsp yellow mustard seeds
  • 6. 1/2 teaspoon brown mustard seeds
  • 7. 10 st whole cloves
  • 8. 1 teaspoon allspice.
  • 9. 1/2 to 1 dl breadcrumbs or panko or mix breadcrumbs and panko.

WHAT TO DO

  • Sätt ungen på 220 gr C (alt highest temp overheat / grill in the kid)
  • Mortar mustard seeds, carnations and allspice together (fine)
  • Mix egg yolks, mustard in a bowl.
  • Spread the mustard mixture over the ham
  • Sprinkle over the spice mixture
  • Sprinkle on breadcrumbs / panko
  • Into the oven with the ham for approx 10 mine or until the grilling has got a nice golden color. If grilling at the highest temp in the oven, it only takes a few minutes to get the grilling done,.

Shrimp sandwich

Ingredients for 4 people (4 st sandwiches)

  • 4 eggs
  • 1 dl majonnäs
  • 2 tablespoons dill
  • 1 krm salt
  • 1 kg of shrimp, with shell
  • 4 slices of bread, browser black
  • butter
  • green lettuce leaves
  • cucumber, in thin slices
  • A garnish
  • 1 bunch of dill
  • lemon slices

Do this:

  1. Boil the eggs, approximately 8 minutes, preferably with a slightly creamy core left in the middle.
  2. Peel and slice the eggs.
  3. Mix mayonnaise with finely chopped dill and a pinch of salt.

Homegrown Mayonnaise

  • 2 egg yolks
  • 1 msk dijonsenap
  • 1/2 msk salt
  • 2,5 dl rapeseed oil
  • White pepper
  • Tabasco

Make the mayonnaise like this:

  1. Whisk egg yolks, dijonsenap, white wine vinegar and salt, the amount of salt is a bit difficult when salting
  2. Drizzle in the oil to begin with while whisking. As it thickens, you can increase the rate with the oil.
  3. Whisk until the mayonnaise is really thick, then it fits well in dressings (can always be diluted with a little water if you want it looser).
  4. Taste with a few drops of tabasco, salta ev. more and also have in white pepper.

Blackcurrant Juice

10 liters of black currants

4 kg of sugar (about 4dl per liter of berries)

Water

Pour the berries into a large saucepan

Fill with water so it covers the berries

Coca and 10 minutes and skim at the same time

Crush berries with a ladle against the edge of the saucepan while it is boiling

Strain off everything

Take the stock that remains in the strainer and pour into a saucepan, on with water again, bring to a boil and then strain again

Boil the juice with the sugar

Fill well-cleaned bottles (rinsed with atamon / water as described on bottle) with the hot juice.

Allow to cool.

Keeps unopened for several years in cool storage.

Ingredients:

5 cups flour

2 teaspoon baking powder

0.5 teaspoon salt

0.5 dl olivolja

2.5 cups milk

Do this:

Preheat the oven to 250 grader.

Mix flour, baking powder and salt in a bowl.

Add oil and milk and mix to a fairly loose dough. Work the dough for a few minutes with a wooden spoon until it can be touched with your fingertips without it sticking.

Divide the dough into 10 pieces and roll into rolls. Place on a plate with parchment paper and make a couple of cuts in each bun.

Bake in the middle of the oven for 10-12 minutes.

Let them cool on the plate.
