Grundrecept
Ingredients
1 vanilla pod
1 st obesprutad citron
3.5 cups milk
3.5 cup heavy cream
6 egg yolks
150 g sugar
Cooking
Slit the vanilla pod.
Rinse the lemon and cut out a piece of shell, a size corresponding femkronas. Avoid the white.
Pour the milk and cream in a saucepan, Add the vanilla and lemon zest, heat to boiling point.
It should be small bubbles around the edge.
Set the pan aside.
Whisk egg yolks and sugar until it is light and fluffy.
Pick up the lemon peel and vanilla pod from the milk mixture.
Pour the milk mixture into the egg mixture while whisking.
Pour the batter into the pan and put it back on the stove over low heat.
Let the cream to simmer, stirring for about 10 minutes until thickened.
It must not boil (just before it reaches the boiling point it starts to smoke heavily).
The cream is ready when you can make tracks in batter on a spoon that you dipped in the pan.
Allow the cream to cool before freezing to ice cream.
