Mannerström's Apple Cake

Ingredients

Apple cake

  • 6-8 Each apples, acid
  • 2 dl pecannötter
  • 1 cup sugar
  • 1 cups flour
  • 1 dl butter, room temperature
  • 1 tsp cardamom
  • 1 tablespoon cinnamon

Vaniljsabayonne

  • 1 Each orange, juice
  • 4 egg yolks
  • 2 tablespoons granulated sugar
  • 1 vanilla pod

A garnish

  • Icing sugar
  • Lemon Balm

WHAT TO DO:

  1. Preheat the oven to 180-200 grader.
  2. Peel the apples and remove the seeds.
  3. Slice the apples and place in a greased dish.
  4. Mix the nuts with the sugar in a food processor.
  5. Mix in remaining ingredients and run into a smooth mass.
  6. Pipe since mass over the apples and bake for 20-25 minutes. Note: make sure the blanket does not get too browned, add in that case on foil.

Vaniljsabayonne

  1. Sear the vanilla pod lengthways and scrape out the seeds into a small, heavy saucepan.
  2. Add the remaining ingredients and whisk together to a fluffy sauce over not too high heat. Whisk all the time and have gladly a cold water ready to set the saucepan in. There, the sauce quickly cool down if it gets too hot.
  3. Place in refrigerator and let cool.
  4. Serve with cake.
