INGREDIENT
- 1 kg prawns in shell
- 2 tablespoons pine nuts
- 1 bunch of dill
- 1/2 Kruka basilica
- 2 cloves of garlic
- 1 lemon
- 3/4 cup canola oil
- 1/2 dl riven parmesan
- salt
- 2 Each avocados
Do this:
- Peel the prawns and set them cold
- Toast the pine nuts in a dry non-stick pan. Do not burn!
- Add chopped dill and basil in a mortar, shock and rub it a lot
- Place the pulp in a blender along with pine nuts
- Peel and crush the garlic in the mortar, add to blender
- Wash the lemon thoroughly and grate one tablespoon cest and place in blender
- Add the Parmesan cheese in the blender
- Drizzle in oil and mix pesto, season with salt
- Peel the avocado and cut into chunks
- Drizzle with lemon juice
- Mix pesto and shrimp and then avocado chunks.
- Serve with good bread
